Abstract

RESEARCHERS HAVE KNOWN for years that a low-fat diet may help prevent cardiovascular disease, but the health care community was slow to consider diet a viable treatment for chronic heart conditions. In the 1970s, when Nathan Pritikin, a layman with heart disease, first proposed his low-fat, low-cholesterol diet, he was ridiculed by the medical community. A decade later, when Dean Ornish proposed a similar diet, he was taken more seriously because he was a physician who had before-and-after angiograms of coronary arteries to prove his contentions.
