Abstract

FOODSERVICE management is a valued component of the academic preparation of dietitians. The competencies needed to be successful in foodservice management are identified. Strategies for enhancing the learning environment and challenges related to foodservice management education are identified. Foodservice management education can be enhanced by the use of active learning strategies, real-life experiences for dietetics students, and the inclusion of increased professional development activities for practicing dietitians.
