Abstract

Health and wellness are an important aspect of US consumers' food purchase decisions. Although there are numerous oils available for use by food companies and the food service industry, soybean oil is uniquely positioned to help Americans meet dietary goals that support an increased focus on health and wellness. This article reviews the role of soybean oil in US diets, the efforts to date that have improved the health profile of soybean oil and the near-term, research-and-development projects that may further enhance the health benefits this oil can offer
