Abstract

Celiac disease is a lifelong inflammatory disorder of the small bowel in genetically susceptible individuals that is triggered by ingestion of gluten. Continued exposure to gluten and gluten-containing products causes malabsorption and malnutrition. This review focuses on helping adults with celiac disease to manage their eating and to achieve a high quality of life.
